The details

This is a big, deep roasting pan built for the meals that feed a crowd. The cooking surface measures about 18 by 13 inches with 3.5-inch sides, enough room for a holiday bird, a standing rib roast, or a full pan of lasagna. The high walls keep the juices in the pan where they belong, so basting, glazing, and deglazing don't end up on the oven floor.

It's made from aluminized steel, which heats quickly and evenly from edge to edge, with a three-layer ceramic nonstick interior made without PFAS, PTFE, or PFOA. Browned bits release instead of welding themselves to the pan, and cleanup is a hand wash with warm soapy water. For anything really stubborn, a one-hour soak in hot soapy water and a plastic scraper take care of it.

The base works on gas, electric, and induction cooktops, so you can sear a roast or brown short ribs right on the burner before sliding the pan into the oven. It's oven safe to 450°F, hot enough for crisp turkey skin and caramelized vegetables. Sturdy stainless steel handles give you a secure grip on a heavy, loaded pan; they get very hot, so keep the oven mitts close.
