The details

A quarter sheet is exactly what it sounds like: a quarter of a full commercial sheet pan, and half the size of a standard half sheet. At about 12 by 9 inches with a one-inch rim, it's sized for small batches, side dishes, and cooking for one or two. It also fits most toaster ovens and countertop air fryer ovens, which makes it the pan people end up using every single day.

Like the rest of the Naturals line, it's made from pure uncoated aluminum, the same material commercial bakeries rely on. Aluminum conducts heat quickly and evenly, so cookies brown on the bottom without burning at the edges and vegetables roast instead of steaming. An encapsulated galvanized steel rim reinforces the pan so it stays flat in a hot oven instead of warping or popping.

There's no coating to wear off, so it's safe under the broiler and oven safe to 500°F. For easy release, use a little butter or oil, or line it with parchment or a silicone mat. Over time the aluminum develops a natural patina, which is normal and doesn't affect how it bakes. If you'd like it brighter, a scrub with lemon juice, vinegar, cream of tartar, or baking soda brings back the shine.
