A santoku is the knife that ends up in your hand without you thinking about it. Short enough to feel controlled, wide enough to scoop up what you just chopped, and flat enough along the edge that a pile of onion goes down in a few clean strokes instead of a rocking argument. This one happens to be beautiful, which is a nice problem to have on a knife you reach for every night.
The details
The blade is Cangshan's proprietary X-7 Damascus steel, 67 layers of it, hardened to 60 on the Rockwell scale. That number matters more than the layer count. At 60 HRC the steel holds a working edge through weeks of real cooking without becoming so hard it chips when it meets a cutting board wrong. The rippling wave pattern down the blade is the layers themselves showing through, not a finish applied on top, so it will not wear off.
Along the edge you will find a row of shallow hollows. They break the suction that makes potato, cucumber and apple cling to a blade, so slices fall away as you work instead of stacking up and needing a shake. On a seven inch santoku doing a tray of vegetables, that adds up.
The handle is G-10 fiberglass in a deep gray faux wood grain, shaped in an octagon rather than a round or a slab. It stays grippy with wet hands, which is most of the time. A single mosaic rivet pins a full tang, and the bolster is angled and recessed, so you can pinch the blade in a proper grip and, later on, sharpen the full length of the edge without a shoulder getting in the way.
It comes with a gray ashwood saya-style sheath with a magnet set inside. No clasp, no snap, just enough hold that the knife stays put and slides out clean. Good for a drawer, and good enough looking to leave on the counter.
