Most people buy an eight inch chef's knife because that is what they were told to buy, then quietly never use the last two inches. A six inch blade is the honest answer for a lot of home kitchens. The details
This is a forged blade in Cangshan's proprietary X-7 Damascus steel, 67 layers of it, hardened to 60 on the Rockwell scale. Sixty is the number worth caring about. It is hard enough to hold a working edge through weeks of real cooking and forgiving enough not to chip the first time it clips a bone or a stoneware plate. The rippling pattern running the length of the blade is the layers themselves, not a finish laid on top, so it stays as the knife ages.
It is full tang, hand-sharpened, and pinned with a single mosaic rivet. The bolster is angled and recessed rather than squared off at the heel, which does two useful things. You can pinch the blade in a proper grip without your knuckles hitting anything, and years from now you can sharpen the full length of the edge instead of leaving a dull stub at the back.
The handle is G-10 fiberglass with a faux wood grain in deep gray, contoured to sit in the hand rather than shaped as a flat slab. G-10 is the practical choice here. It does not swell, crack or stain the way real wood can, and it keeps its grip when your hands are wet, which in a home kitchen is most of the time.
It comes with a gray ashwood saya-style sheath with a magnet set inside. No clasp to fuss with, just enough hold that the knife stays seated and slides out clean. Safe in a drawer, and handsome enough to leave out.
