We don't put our name on much, so when we do, it has to earn it. This pancake mix is made for us by Dr. Pete's Gourmet Foods, a family company that grew out of the recipes of Dr. T. A. Peterson of Savannah, Georgia, a man who genuinely loved cooking breakfast. His family often made these same pancakes for Sunday supper. We tasted them and decided they were good enough to put our own name on.
The mix is still handcrafted in small batches in Ailey, Georgia. It takes care of the dry side of the recipe, and you bring the fresh ingredients: milk (or buttermilk, if you like a little tang), an egg, and melted butter. Because the butter and dairy are your own, the pancakes come out golden and tender with that homemade flavor, since they're mostly homemade.
