Mini Cheesecake Pan

The details

The pan holds six round wells, and every well has a removable bottom. Press a push-up disc into each cup, build your crust and filling on top, and after baking you simply push from below to release each cheesecake intact, top untouched.

Across the whole pan it measures roughly 15 3/4 by 11 1/8 inches, so it sits comfortably on a standard rack. It is built from heavy-gauge aluminized steel with the corrugated, ridged surface that circulates air for even baking and keeps the pan from warping. The custard-style fillings these wells are made for benefit from that steady, gentle heat.

AMERICOAT nonstick lines each well, a silicone-based coating made without PTFE, PFOA, or BPA, so the sides release cleanly and the pan wipes out without scrubbing.
