The details

The rondeau is a chef's secret weapon, and this one is built to the same standard. Its wide, shallow profile gives you an exceptionally large cooking surface, which means less crowding, more caramelization, and better results on everything from searing proteins to braising short ribs to making a big batch of Sunday sauce.

Crafted in Italy from 5-ply stainless clad construction, five bonded layers of premium metal work together to deliver even, responsive heat with no hot spots. The 5-ply base also makes cleanup effortless since food releases cleanly rather than sticking and burning.

Two looped side handles make it easy to move from stovetop to oven to table, and the rolled rim lets you pour sauces and pan drippings without drips or spills. The fitted lid locks in moisture for braising and slow cooking, and the whole pan is oven safe to 800F.

How to use

  1. Preheat over medium heat before adding oil or fat
  2. Sear proteins in batches without overcrowding for maximum browning
  3. Build flavor by deglazing with wine, stock, or aromatics
  4. Add liquid, cover with lid, and braise low and slow on the stovetop or in the oven
  5. Remove lid to reduce sauce to your desired consistency
  6. Use the rolled rim to pour cleanly directly from the pan
