The tagine is a thousand-year-old design for a reason. The tall conical lid acts as a self-basting steamer: as moisture from the meat and vegetables rises, it condenses against the cooler peak and rains back down. Long, slow cooking happens at low heat. The Emile Henry Tagine is made from Flame Ceramic® — a proprietary high-heat ceramic developed in Marcigny, France, where the company has been firing Burgundian clay since 1850. Unlike traditional Moroccan terracotta tagines, the Emile Henry version can go directly on a gas, electric, or induction-compatible stovetop (with an induction disk), as well as in the oven up to 500°F. No fragile-handling, no diffuser ring, no cracking from temperature shock.

The 12.5-inch base holds a 3.4‑quart capacity — enough for a hearty dinner for 4 to 6. The tall conical lid is sized for that classic self-basting effect. The flat base distributes heat evenly across induction or gas. Lifts off neatly to bring straight to the table — the tagine IS the serving dish.
