The sliding lid on this Pullman pan is what gives you those clean corners at home. Bake with the lid closed for a flat-topped square loaf, or leave it off for a classic rounded top. The details

This Pullman pan comes in two sizes, each with a sliding cover that locks into a small indentation so it stays put as the dough rises. Straight, vertical sides give an even crumb that slices into tidy, sandwich-ready squares.

Both are made of heavy-gauge aluminized steel with a ribbed, corrugated design that circulates air for even browning and helps the long pan resist warping, the same construction commercial bakeries rely on. The interior is coated in AMERICOAT, the silicone-based nonstick made without PTFE, PFOA, or BPA, so even an enriched, sticky dough turns out cleanly. To use the cover, slide it on starting with the curled edge until it locks; let the pan cool before tapping it free. Hand washing is recommended; oven safe to 450 degrees.
