Hestan NanoBond 0.75-Quart Butter Warmer

Every good kitchen has a tiny pan that does the small jobs beautifully, and this is ours. At three-quarters of a quart it melts a stick of butter for lobster, warms a few ounces of cream, or holds a pan sauce without spreading it so thin it burns. The flared rim is shaped for pouring straight into a ramekin or a mug.

The details

Despite its size, the butter warmer is built like the rest of the line: triple-bonded 18/10 stainless steel over a ProCore pure-aluminum core, about 35% more conductive than ordinary aluminum-clad pans. Small pans are where uneven heat does the most damage, so that conductivity is what keeps butter from browning before it has finished melting.

The molecular titanium surface, bonded directly to the steel and roughly four times harder than ordinary stainless, is non-toxic with no coating to scratch or wear away. Stir with a metal spoon, deglaze, and toss it in the dishwasher.

It has a single ergonomic handle rather than a lid, which suits its job; this is an open warming and reducing pan, not a covered cooker.
