The details
The pan measures about 9 inches across and 3.5 inches deep at the baking surface, roughly 10.63 inches outer diameter. The central tube conducts heat through the middle of the batter, the key to baking tall sponge and angel food cakes that set evenly without a dense, underbaked core.
It is built from heavy-gauge aluminized steel with USA Pan's corrugated surface for even browning and warp resistance, finished in AMERICOAT nonstick made without PTFE, PFOA, or BPA. The swirled walls release cleanly so the decorative pattern survives the turn out of the pan. Keep your oven at or below 450°F.
