If you could keep only one pan within arm's reach, this is a strong candidate. The essential pan splits the difference between a skillet and a sauté: rounded, sloping sides for tossing and folding, plus enough depth and a lid to braise, simmer, and shallow-fry. Finished in Hestan's TITUM nonstick, it releases eggs and fish as easily as it browns a chicken thigh.

The details

The body is clad stainless steel built in Italy around a pure aluminum core, so it heats quickly and evenly rather than scorching in hot spots. Over that, Hestan layers its TITUM nonstick system: three PFOA-free nonstick layers reinforced with diamond particles and anchored with titanium, which gives the surface real toughness. It is rated for metal utensils, so you are not stuck hunting for the silicone spatula.

At 3.5 quarts with a fitted lid, it covers a lot of ground. The rounded bottom makes it easy to keep food moving for a family-sized stir-fry, and the depth holds enough liquid for a braise or a pan of paella. It is dishwasher safe, though hand washing will keep any nonstick surface at its best for longer.
