Made from Emile Henry's Flame Ceramic® — a proprietary high-heat ceramic developed in Marcigny, France, where the company has been firing Burgundian clay since 1850. Flame Ceramic conducts heat differently than the cordierite stones you'll find at the hardware store: it holds heat longer, absorbs less moisture (so it won't go soggy under wet doughs), and is lighter to handle. It tolerates up to 500°F and is rated for direct gas grill use.

At 14.5 inches across, it fits a generous personal pizza, a sheet of focaccia, or a no-knead boule. The smooth glazed surface releases dough cleanly when properly floured — no parchment needed — and wipes clean with a damp cloth. Unlike unglazed cordierite stones, it goes in the dishwasher.
