This 3.5-quart essential pan combines a broad, roughly 10-inch cooking surface with high, curved sides about 3.5 inches deep, so you can sear, then add liquid and simmer, all in the same pan. The rounded interior is friendly to a whisk or a wooden spoon, and the flared rim is designed to pour cleanly without dribbling down the side. The tempered glass lid lets you watch a braise or keep grains steaming, and the long handle stays cool on the stovetop.
