Each knife in this four-piece set is built around a 67-layer VG10 Damascus steel blade — 67 individual folds of steel around a hard VG10 core, finished to a fish-bone Damascus pattern that makes the layering visible on the blade face. That's not surface decoration; it's the actual structure of the steel. The VG10 core holds at 62 HRC, measurably harder and sharper-holding than German X50 steel, with a 15° double-bevel fine edge ground on both sides. Ambidextrous, and maintainable at home on a whetstone.
The fine edge is worth calling out specifically. Serrated steak knives are common because they're forgiving of a dull blade — they tear through meat rather than slice it. A fine-edge knife at 62 HRC slices cleanly, and when it eventually needs sharpening, you can actually bring it back. The Avanta Damascus set is a long-term investment in the meal.
