Pici

Pici are thick, long, round noodles typical of central Italian cuisine. Excellent with any sauce but especially with cacio e pepe, or meat sauces with game.

Organic pasta by Antico Pastificio Umbro is produced with 100% Italian grain, slow dried at a low temperature and bronze drawn. Processing techniques and the use of carefully selected raw materials make the Organic “Bio” line healthy and delicious. 500gr/1.1lb

In the green valley at the bottom of Monte Subasio right between Assisi, Perugia and Spoleto – jewels of the green Umbria region – there is the ancient factory of Antico Pastificio Umbro producing pasta and rice in the old traditional way. Around 1921-1925 a few elder workers learned the method of using bronze extruders and cutting the pasta by hand which dries slowly for long time.
